Why not delight your mom with some really yummy and unusual Mothers Day cookies this Mothers Day? I'm sure your mother will simply love to have these light, lemony cookies. It's really easy to make in 6 easy steps. Here's how to make it:
Ingredients:
- 1 large lemon
- 1 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 1/3 cups sifted cake flour
- 1 cup butter, chilled and cut up (you can also use margarine instead of butter)
- Vanilla wafer
- Pour the lemon zest and sugar into food processor. Process the mixture until it becomes smooth.
- Add butter and process the mixture until it gets fluffy.
- Scrape down the bowl and add the remaining ingredients. Process just until they gets mixed up well.
- Roll the dough into 2 - 1 1/2 inch logs. Wrap in wax paper and keep it into the refrigerator.
- Cut the logs into 1/4 inch slices. Bake on ungreased cookie sheet at 350 degrees for 10 minutes or untill you get the golden brown color.
- Before serving ice them with frosting made from 1 cup powdered sugar, 1/4 teaspoon lemon juice and 1 tablespoon milk.
