With Mothers Day fast approaching, I am sure you're looking for a way to make the day a real blast without making a mess at your kitchen. Ingredients:

• 1 large lemon
• 1 cup sugar
• 1/4 teaspoon salt
• 1/2 teaspoon baking soda
• 2 1/3 cups sifted cake flour
• 1 cup butter, chilled and cut up (you can also use margarine instead of butter)
• Vanilla wafer
  

Direction:

• Pour the lemon zest and sugar into food processor. Process the mixture until it becomes smooth.
• Add butter and process the mixture until it gets fluffy.
• Scrape down the bowl and add the remaining ingredients. Process just until they gets mixed up well.
• Roll the dough into 2 - 1 1/2 inch logs. Wrap in wax paper and keep it into the refrigerator.
• Cut the logs into 1/4 inch slices. Bake on ungreased cookie sheet at 350 degrees for 10 minutes or untill you get the golden brown color.
• Before serving ice them with frosting made from 1 cup powdered sugar, 1/4 teaspoon lemon juice and 1 tablespoon milk.
